Ingredients

1 pound of medium-sized carrots, peeled and cut into even sticks

3 tablespoons olive oil

3 tablespoons balsamic vinegar

2 tablespoons honey

1 teaspoon garlic powder

½ teaspoon ground cumin

Salt and pepper, to taste

Fresh thyme or parsley, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Carrots: In a large mixing bowl, combine the peeled and sliced carrots with olive oil, balsamic vinegar, honey, garlic powder, cumin, salt, and pepper. Toss well to ensure the carrots are evenly coated.

Arrange on Baking Sheet: Spread the coated carrots in a single layer on a large baking sheet lined with parchment paper. Make sure they are spaced out for even roasting.

Roast the Carrots: Place the baking sheet in the preheated oven and roast for about 25-30 minutes, or until the carrots are tender and caramelized. Halfway through the roasting time, give the carrots a gentle toss to ensure they cook evenly.

Garnish and Serve: Once cooked, remove the carrots from the oven. If desired, sprinkle fresh thyme or parsley on top for an added burst of color and flavor. Serve immediately as a side dish!
