Ingredients

2 cups mixed fresh berries (strawberries, blueberries, raspberries)

1 tablespoon honey (plus extra for drizzling)

1 cup heavy whipping cream

1 teaspoon vanilla extract

2 tablespoons powdered sugar

1 ½ cups shortcake biscuits, crumbled (store-bought or homemade)

Mint leaves for garnish (optional)

Instructions

Prepare the Berries: In a medium bowl, combine the mixed fresh berries. Drizzle with 1 tablespoon of honey and gently toss to coat. Set aside to macerate for about 15-20 minutes.

Whip the Cream: In a large mixing bowl, pour the heavy whipping cream and add the vanilla extract and powdered sugar. Using a hand mixer or whisk, whip until soft peaks form and the cream is light and fluffy.

Assemble the Trifles: In small serving glasses or cups, start by adding a layer of crumbled shortcake biscuits. Follow this with a layer of the honey-coated berries and then spoon some whipped cream on top.

Repeat Layers: Repeat the layering process until the glasses are nearly full, finishing with a generous dollop of whipped cream on top.

Garnish: Drizzle a little honey on the whipped cream and garnish with fresh mint leaves if desired.

Chill and Serve: Place the trifles in the refrigerator for at least 30 minutes to allow the flavors to meld together. Serve chilled, and enjoy!
