For the Chicken:

1 lb (450g) boneless, skinless chicken thighs, sliced into bite-sized pieces

3 tablespoons honey

3 tablespoons soy sauce (low sodium preferred)

2 tablespoons rice vinegar

3 cloves garlic, minced

1 tablespoon ginger, minced

1 tablespoon cornstarch

Salt and pepper to taste

2 tablespoons vegetable oil

For the Vegetables:

1 bell pepper (red or yellow), sliced

1 cup broccoli florets

1 cup snap peas

1 medium carrot, julienned

3 green onions, chopped

Sesame seeds for garnish

For Garnish:

Optional: Fresh cilantro or parsley

Marinate the Chicken:

    In a mixing bowl, combine honey, soy sauce, rice vinegar, minced garlic, minced ginger, and cornstarch. Whisk until well blended. Add the sliced chicken, mix to coat, and let it marinate for at least 15 minutes (or up to 1 hour in the refrigerator for more flavor).

      Prepare the Vegetables:

        While the chicken is marinating, wash and slice the bell pepper, broccoli, snap peas, and carrot. Set aside.

          Cook the Chicken:

            Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken (discard marinade) and season with salt and pepper. Stir-fry for about 5-7 minutes until the chicken is cooked through and golden brown, then remove from the pan and set aside.

              Stir Fry the Veggies:

                In the same skillet, add the remaining tablespoon of oil. Add the bell pepper, broccoli, snap peas, and carrot. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.

                  Combine and Serve:

                    Return the chicken to the skillet with the vegetables. Stir everything together and cook for an additional 2 minutes to heat through. If desired, add extra honey or soy sauce for an additional flavor boost.

                      Garnish & Serve:

                        Remove from heat, sprinkle with sesame seeds and chopped green onions. Optionally, garnish with fresh cilantro or parsley. Serve hot over cooked rice or noodles.
