4 bone-in pork chops (1-inch thick)

2 tablespoons olive oil

1/4 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tablespoon apple cider vinegar

1 teaspoon fresh ginger, grated

1 teaspoon sesame oil

Chopped green onions for garnish (optional)

1.5 pounds baby potatoes, halved

2 tablespoons olive oil

1 teaspoon dried rosemary

1 teaspoon garlic powder

Prep the Potatoes:

      - In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, dried rosemary, garlic powder, salt, and pepper until evenly coated.

        - Spread the potatoes in a single layer on a baking sheet and roast in the oven for about 25-30 minutes, or until golden brown and fork-tender, tossing halfway through.

          Prepare the Pork Chops:

            - While the potatoes are roasting, season both sides of the pork chops with salt and pepper.

              - In a large skillet over medium heat, heat the olive oil. Once hot, add the pork chops and sear for about 4-5 minutes on each side, until they are nicely browned.
