4 bone-in, skin-on chicken thighs

1/4 cup honey

3 tablespoons soy sauce (low sodium recommended)

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon apple cider vinegar

1 teaspoon sesame oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

2 teaspoons cornstarch mixed with 2 tablespoons water (optional, for thickening sauce)

Chopped green onions and sesame seeds, for garnish

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking dish with aluminum foil for easy cleanup.

    Make the Marinade: In a medium bowl, whisk together the honey, soy sauce, minced garlic, ginger, apple cider vinegar, sesame oil, red pepper flakes, salt, and black pepper until well combined.

      Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each thigh is well coated. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes (or up to 4 hours for more flavor).

        Prepare for Roasting: Remove the marinated chicken thighs from the refrigerator and allow them to come to room temperature (about 15-20 minutes). Arrange the thighs skin-side up in the prepared baking dish, pouring any leftover marinade over the top.

          Roast the Chicken: Roast the chicken in the preheated oven for 30-35 minutes, or until the skin is golden brown and crispy, and the internal temperature reaches 165°F (75°C).
