For the Summer Slaw:

2 cups green cabbage, thinly sliced

1 cup red cabbage, thinly sliced

1 cup carrots, shredded

1 small red bell pepper, thinly sliced

1/4 cup fresh cilantro, chopped

1/4 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon honey

Salt and pepper to taste

For the Tacos:

8 small corn or flour tortillas

Lime wedges (for serving)

Extra cilantro (for garnish)

Prepare the Honey Garlic Sauce: In a bowl, whisk together honey, soy sauce, minced garlic, olive oil, grated ginger, lime juice, salt, and pepper. Set aside.

    Marinate the Shrimp: In a ziplock bag or bowl, combine the shrimp and the honey garlic sauce, ensuring the shrimp is well-coated. Marinate in the refrigerator for at least 15-30 minutes.

      Make the Summer Slaw: In a large mixing bowl, combine the green cabbage, red cabbage, shredded carrots, red bell pepper, and cilantro. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper. Pour the dressing over the slaw ingredients and toss until everything is evenly coated. Set aside.
