Honey Roasted Butternut Squash

1 medium-sized butternut squash (approximately 2-3 lbs)

3 tablespoons honey (preferably local or raw)

2 tablespoons olive oil

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

Salt and pepper to taste

1/4 cup chopped pecans (optional for crunch)

Fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Butternut Squash: Carefully peel the butternut squash using a vegetable peeler. Cut it in half lengthwise and scoop out the seeds with a spoon. Slice the squash into 1-inch cubes for even roasting.

      Combine the Ingredients: In a large bowl, whisk together the honey, olive oil, ground cinnamon, ground nutmeg, salt, and pepper until well combined.

        Coat the Squash: Add the cubed butternut squash to the bowl and toss until all pieces are coated evenly with the honey mixture.

          Spread on Baking Sheet: Spread the coated butternut squash in a single layer on the prepared baking sheet. Make sure they are not overcrowded to allow for proper roasting.
