Ingredients

8 oz. (about 225g) short pasta (such as rotini or penne)

1 cup cherry tomatoes, halved

1 cup mozzarella balls (bocconcini), drained

1 cup diced cucumber

1/2 cup black olives, pitted and halved

1/2 cup salami, cut into bite-sized pieces

1/4 cup fresh basil leaves

1/4 cup olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

Salt and pepper, to taste

Wooden skewers (or metal skewers)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the short pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Adjust seasoning as needed.

Assemble the Skewers: Take a wooden skewer and begin threading the ingredients. Start with a cherry tomato, followed by a mozzarella ball, a piece of cucumber, a salami slice, and an olive. Repeat the process until the skewer is nearly filled, leaving some space at the end for easy handling. Add a fresh basil leaf at the top for a vibrant finish.

Mix with Dressing: Once all the skewers are assembled, drizzle the dressing over them. Alternatively, you can toss the prepared pasta salad in a bowl with the dressing before skewering if you prefer a more integrated flavor.

Serve: Lay the skewers on a serving platter and garnish with any remaining basil leaves or a sprinkle of cracked pepper. Serve immediately or chill for an hour in the refrigerator for the flavors to meld.

Enjoy: These Italian Pasta Salad Skewers are perfect for parties, picnics, or a fun twist on a pasta salad!
