1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 teaspoon black pepper

1/2 cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

1/2 cup diced fresh jalapeños (seeds removed for less heat)

3/4 cup buttermilk

1 large egg (for egg wash)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and black pepper until well combined.

      Cut in the Butter: Add the cold, cubed butter into the flour mixture. Using a pastry cutter or your fingertips, blend until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

        Add Cheese and Jalapeños: Gently fold in the shredded cheddar cheese and diced jalapeños, ensuring they are evenly distributed throughout the flour mixture.

          Combine Wet Ingredients: In a separate bowl, pour in the buttermilk. Make a well in the center of the dry ingredients and pour the buttermilk into the well. Stir gently with a spatula until just combined. Do not over-mix; the dough should be slightly sticky.

            Shape the Dough: Turn the dough out onto a floured surface and knead gently 4-5 times until the dough comes together. Pat the dough into a rectangle about 1-inch thick.

              Cut the Biscuits: Using a biscuit cutter or a glass, cut out biscuits from the dough, placing them on the prepared baking sheet. Gather the scraps, re-pat to 1-inch thickness, and cut out additional biscuits until the dough is used up.
