4 whole wheat tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup finely chopped bell peppers (red, yellow, and green)

1 cup finely chopped spinach

1/2 cup sweet corn (fresh, canned, or frozen)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 tablespoon olive oil or butter

Salsa and sour cream for dipping (optional)

Instructions
 

Prep the Veggies: Rinse and finely chop the bell peppers and spinach. If using frozen corn, ensure it is thawed and drained.

    Mix the Filling: In a mixing bowl, combine the chopped bell peppers, spinach, corn, garlic powder, and onion powder. Stir in both the shredded cheddar and mozzarella cheeses, stirring until everything is evenly mixed.

      Heat the Pan: Place a non-stick skillet over medium heat and add the olive oil or butter, allowing it to melt and coat the surface of the pan.

        Assemble the Quesadilla: Lay one tortilla in the skillet. Evenly spread 1/4 of the veggie and cheese mixture over half of the tortilla. Fold the other half over to create a half-moon shape.

          Cook Until Golden: Cook for about 3-4 minutes or until the bottom is golden and the cheese starts to melt. Carefully flip the quesadilla with a spatula and cook the other side for another 2-3 minutes.

            Repeat: Remove the cooked quesadilla from the skillet and let it cool for a minute before cutting it into triangles. Repeat the process with the remaining tortillas and filling.
