½ cup almond flour

½ cup unsweetened coconut flakes

½ cup honey or maple syrup

1 teaspoon vanilla extract

½ teaspoon salt

1 teaspoon baking powder

2 cups Greek yogurt (plain or vanilla)

Zest of 2 lemons

Juice of 1 lemon

1 cup fresh blueberries (or frozen, thawed)

2 tablespoons poppy seeds (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving an overhang for easy removal.

    Prepare the Crust: In a large mixing bowl, combine the rolled oats, almond flour, coconut flakes, honey (or maple syrup), vanilla extract, salt, and baking powder. Mix well until all ingredients are fully combined and crumbly.

      Assemble the Base: Press half of the mixture firmly into the bottom of the prepared baking dish to create an even layer. Bake the crust in the preheated oven for 10 minutes, until lightly golden. Remove and let cool slightly.

        Make the Yogurt Filling: In a separate bowl, combine the Greek yogurt, lemon zest, lemon juice, and blueberries. If using, fold in the poppy seeds gently. Stir until everything is well incorporated.

          Layer the Yogurt Filling: Pour the yogurt mixture over the cooled oat crust, spreading it evenly. Sprinkle the remaining oat mixture over the top, pressing down gently to ensure it adheres.
