Lemon Dill Roasted Salmon and Baby Potatoes

For the Salmon:

4 salmon fillets (about 6 ounces each)

3 tablespoons olive oil

Zest of 1 lemon

2 tablespoons fresh lemon juice

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

2 cloves garlic, minced

Salt and pepper to taste

For the Baby Potatoes:

1.5 pounds baby potatoes, halved

2 tablespoons olive oil

1 teaspoon paprika

Salt and pepper to taste

Fresh dill for garnish (optional)

Instructions
 

Preheat the Oven:

    Preheat your oven to 425°F (220°C).

      Prepare the Potatoes:

        In a large mixing bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, paprika, salt, and pepper. Ensure they are evenly coated. Spread the potatoes out in a single layer on a large baking sheet.

          Roast the Potatoes:

            Place the baking sheet with the potatoes in the preheated oven. Roast for about 15 minutes.

              Prepare the Salmon:

                While the potatoes are roasting, mix together in a small bowl the olive oil, lemon zest, lemon juice, dill, minced garlic, salt, and pepper.

                  Add Salmon to the Sheet:

                    After 15 minutes, remove the baking sheet from the oven. Carefully push the potatoes to one side of the sheet, creating space for the salmon. Place the salmon fillets skin-side down on the baking sheet.

                      Season the Salmon:

                        Drizzle the lemon-dill mixture over the salmon fillets, ensuring each fillet is well-coated.

                          Roast Together:

                            Return the baking sheet to the oven and continue roasting for an additional 12-15 minutes or until the salmon is cooked through (internal temperature should reach 145°F/63°C) and the potatoes are tender and crispy.

                              Serve:

                                Once cooked, remove from the oven. Allow to cool slightly before serving. Garnish the salmon and potatoes with additional fresh dill if desired.
