Ingredients

4 salmon fillets (6 oz each)

1 bunch of fresh asparagus (about 1 lb)

4 tablespoons unsalted butter, divided

3 cloves garlic, minced

1 lemon (juice and zest)

2 tablespoons olive oil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon slices (for serving)

Instructions

Preheat your oven to 400°F (200°C).

Prepare the asparagus: Trim the ends of the asparagus and place them on a large baking sheet. Drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Toss to coat evenly.

Make the lemon garlic butter: In a small saucepan over medium heat, melt 3 tablespoons of butter. Add the minced garlic and sauté for about 1 minute, or until fragrant. Remove from heat and stir in the lemon juice and zest. Set aside.

Add the salmon: Move the asparagus to the sides of the baking sheet, creating space for the salmon fillets in the center. Place the salmon fillets on the baking sheet. Drizzle with the lemon garlic butter and sprinkle with additional salt and pepper.

Finish with butter: Cut the remaining tablespoon of butter into small pieces and place on top of the salmon fillets.

Bake the dish: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender.

Garnish and serve: Remove the baking sheet from the oven. Sprinkle fresh parsley over the salmon and asparagus, and serve with lemon slices on the side for an extra zesty kick.
