Ingredients

8 oz soba noodles (or other preferred noodles)

1 cup shelled edamame (fresh or frozen)

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

Zest of 1 lemon

Juice of 1 lemon

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions

Cook the Noodles: Bring a large pot of salted water to a boil. Add the soba noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Edamame: If using frozen edamame, steam or boil it until tender, about 3-5 minutes. Drain and set aside.

Make the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes until fragrant but not browned.

Combine Ingredients: Add the cooked noodles and edamame to the skillet. Drizzle the lemon juice, soy sauce, sesame oil, zest of lemon, and a pinch of salt and pepper over the mixture. Toss everything together gently, allowing the noodles to absorb the flavors for about 3-4 minutes.

Plate the Dish: Portion the noodle and edamame mixture into bowls. Garnish with sliced green onions, a sprinkle of sesame seeds, and fresh herbs like cilantro or parsley if using.

Serve: Enjoy your vibrant and fresh Lemon Garlic Edamame Noodle Bowls warm, at room temperature, or chilled!
