Ingredients

1 pound fresh green beans, trimmed

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon freshly grated lemon zest

3 tablespoons fresh lemon juice

1 teaspoon soy sauce (or tamari for gluten-free)

1 teaspoon red pepper flakes (adjust to taste)

Salt and freshly ground black pepper, to taste

1 tablespoon sesame seeds (optional, for garnish)

Fresh lemon slices (for garnish)

Chopped fresh parsley or cilantro (for garnish)

Instructions

Prep the Beans: Bring a medium pot of salted water to a boil. Add the trimmed green beans and blanch for 3-4 minutes until vibrant green and slightly tender. Drain and immediately transfer to a bowl of ice water to stop the cooking process. After a few minutes, drain again and set aside.

Heat the Oil: In a large skillet or wok, heat the olive oil over medium-high heat. Once the oil is shimmering, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to let it burn.

Stir in the Green Beans: Add the blanched green beans to the skillet, stirring well to coat them in the garlic oil. Sauté for another 2-3 minutes, allowing the beans to pick up the flavor and begin to caramelize slightly.

Add Flavorings: Drizzle the lemon juice and soy sauce over the sautéing green beans. Sprinkle in the lemon zest and red pepper flakes. Toss everything together, ensuring the green beans are evenly coated with the sauce.

Season: Taste the stir fry and season with salt and freshly ground black pepper to your liking. Stir-fry for another 1-2 minutes until all ingredients are well combined and heated through.

Serve: Remove from heat and transfer the green beans to a serving platter. Garnish with sesame seeds, fresh lemon slices, and chopped herbs before serving.

Enjoy: Serve warm as a vibrant side dish or over a bed of rice or quinoa for a light main course.
