1 cup orzo pasta

3 cups water (for cooking the orzo)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (any color), diced

1/2 red onion, finely chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1/4 cup extra virgin olive oil

Juice of 2 lemons

3 cloves garlic, minced

Salt and pepper, to taste

1/2 teaspoon red pepper flakes (optional, for heat)

Instructions
 

Cook the Orzo: In a medium pot, bring 3 cups of water to a boil. Add the orzo pasta and cook according to package instructions (usually about 8-10 minutes) until al dente. Drain and rinse under cold water to cool it down quickly. Set aside in a large bowl.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, pepper, and red pepper flakes (if using) until emulsified. Adjust seasoning to taste.
