1 lb large shrimp, peeled and deveined

3 cloves garlic, minced

Zest and juice of 2 large lemons

1/4 cup olive oil

1 tsp smoked paprika

1 tsp red pepper flakes (adjust for spice level)

Salt and black pepper, to taste

1 tbsp fresh parsley, chopped (plus more for garnish)

1 tbsp fresh basil, chopped (optional)

Skewers (wooden or metal)

Instructions
 

Prep the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

    Marinate the Shrimp: In a large mixing bowl, combine the minced garlic, lemon zest, lemon juice, olive oil, smoked paprika, red pepper flakes, salt, and black pepper. Whisk until combined. Add the shrimp to the marinade, ensuring they are well-coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for a more intense flavor).

      Assemble Skewers: After the shrimp have marinated, thread them onto the skewers. You can alternate with lemon wedges or veggies like bell peppers and zucchini for added flavor and color.

        Grill the Shrimp: Preheat the grill to medium-high heat. Lightly oil the grill grates. Grill the skewers for about 2-3 minutes on each side, or until the shrimp turn pink and opaque, being careful not to overcook.
