Lemon Garlic Turkey Tenderloin Sheet Pan

1.5 lbs turkey tenderloin

4 cloves garlic, minced

2 lemons (juice and zest of one, slices of the other)

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 lb baby potatoes, halved

2 cups green beans, trimmed

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Marinate the Turkey: In a bowl, whisk together the minced garlic, lemon juice, lemon zest, olive oil, oregano, smoked paprika, salt, and pepper. Place the turkey tenderloin in a resealable bag or shallow dish, and pour the marinade over it. Seal or cover and refrigerate for at least 30 minutes, preferably 1-2 hours to enhance the flavor.

      Prepare the Vegetables: While the turkey is marinating, prepare the baby potatoes and green beans. In a large mixing bowl, toss the halved baby potatoes with a drizzle of olive oil, salt, and pepper until well-coated.
