1 cup fresh lemon juice (about 4-6 lemons)

Zest of 2 lemons

1 cup granulated sugar, divided

2 cups heavy whipping cream

1 teaspoon vanilla extract

1 package (14 ounces) graham crackers

Fresh berries (strawberries, blueberries, or raspberries) for garnish

Mint leaves for garnish

Prepare the Lemon Mixture: In a medium bowl, combine the fresh lemon juice, lemon zest, and ¾ cup of granulated sugar. Whisk until the sugar dissolves completely. Set aside.

    Whip the Cream: In a separate large bowl, beat the heavy whipping cream and the remaining ¼ cup of sugar together with an electric mixer on medium-high speed until soft peaks form. Stir in the vanilla extract and continue whipping until stiff peaks form.

      Combine: Gently fold the lemon mixture into the whipped cream until thoroughly combined. Be careful not to deflate the whipped cream too much.

        Assemble the Cake: In a rectangular dish (about 9x13 inches), spread a thin layer of the lemon cream mixture on the bottom. Place a layer of graham crackers over the cream, breaking them as needed to fit. Repeat this process, layering the lemon cream and graham crackers until all the cream is used, finishing with a final layer of the lemon cream on top.

          Chill: Cover the dish with plastic wrap and refrigerate the cake for at least 4 hours, or preferably overnight. This will allow the graham crackers to soften and absorb the flavors.
