1 ½ cups all-purpose flour

¾ cup granulated sugar

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 large lemon (zest and juice)

1 large egg

½ cup sour cream

¼ cup unsalted butter, melted

½ teaspoon vanilla extract

1 cup fresh raspberries (or frozen, thawed and drained)

Optional: powdered sugar for dusting

Instructions
 

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly with cooking spray.

    In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

      In a separate bowl, combine the lemon zest and juice, egg, sour cream, melted butter, and vanilla extract. Whisk until smooth.

        Pour the wet ingredients into the dry ingredients and gently mix just until combined. Be careful not to overmix; it’s okay if there are a few lumps in the batter.

          Fold in the raspberries delicately to distribute them evenly throughout the batter.

            Scoop the batter into the prepared muffin tin, filling each liner about ¾ full.

              Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean. The tops should be lightly golden brown.

                Remove the muffins from the oven and allow them to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

                  Optional: Dust with powdered sugar before serving for an extra touch of sweetness!
