Ingredients

2 cups plain Greek yogurt (preferably low-fat or non-fat)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 cup mixed berries (fresh or frozen; strawberries, blueberries, raspberries)

1/2 cup granola (preferably low-sugar)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Yogurt Mixture:

In a medium bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir well until the mixture is smooth and all ingredients are fully incorporated.

      Prepare the Berries:

If using fresh berries, wash them thoroughly. For frozen berries, let them thaw and drain any excess liquid. You can also lightly mash the berries with a fork for a more sauce-like consistency if desired.

          Layer the Parfait:

In serving glasses or bowls, start with a generous scoop of the yogurt mixture at the bottom.

              Add Berries:

Next, add a layer of mixed berries over the yogurt. Use about 1/4 cup of berries for each layer.

                  Add Granola:

Sprinkle a layer of granola on top of the berries for added crunch.

                      Repeat the Layers:

Repeat the yogurt, berries, and granola layering process until the glasses are filled. Aim for at least two layers for a beautiful presentation.

                          Garnish:

Finish by topping the parfait with a few extra berries, a sprinkle of granola, and a fresh mint leaf for a pop of color.

                              Chill and Serve:

If desired, refrigerate the parfaits for about 30 minutes to let the flavors meld. Serve chilled, and enjoy your refreshing treat!
