4 medium sweet potatoes

1 cup cooked and seasoned ground beef or turkey (or a plant-based alternative)

1 cup black beans, drained and rinsed

1 cup shredded cheddar cheese (or dairy-free cheese)

1/2 cup diced tomatoes (fresh or canned)

1/4 cup sliced jalapeños (pickled or fresh, optional)

1/4 cup sour cream or Greek yogurt (or vegan sour cream)

1/4 cup chopped green onions

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Olive oil for brushing

Fresh cilantro for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash and scrub the sweet potatoes thoroughly. Pat them dry and pierce each potato several times with a fork. Brush the skins lightly with olive oil and season with salt.

      Bake the Sweet Potatoes: Place the sweet potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until tender. You can check their doneness by inserting a fork; it should glide through easily.

        Make the Filling: While the sweet potatoes are baking, prepare your filling. In a skillet over medium heat, combine the cooked ground beef or turkey with the black beans, chili powder, cumin, salt, and pepper. Stir to combine and cook for about 5-7 minutes until warmed through.

          Prepare the Potato Skins: Once the sweet potatoes are baked, remove them from the oven and let them cool slightly. Slice each potato in half lengthwise and scoop out some of the flesh, leaving a border around the edges to make a skin. Reserve the scooped sweet potato for another use, like mashed sweet potatoes!

            Assemble the Nacho Skins: Place the potato skins on a baking sheet. Evenly distribute the beef and bean mixture between the skins. Top each with shredded cheddar cheese, diced tomatoes, and jalapeños.
