1 medium head of cauliflower (about 4 cups riced)

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 large egg

½ cup almond flour (or coconut flour)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

¼ teaspoon paprika (optional for a bit of spice)

Cooking spray or olive oil for baking

Instructions
 

Prepare the Cauliflower: Start by cutting the cauliflower head into florets. Steam or microwave the florets until tender (about 5-7 minutes), then drain any excess moisture thoroughly. A clean kitchen towel can aid in removing additional moisture.

    Rice the Cauliflower: Once cooled, use a food processor to pulse the steamed cauliflower until it resembles rice. If you don’t have a food processor, you can use a box grater.

      Mix the Ingredients: In a large bowl, combine the riced cauliflower, shredded mozzarella, grated Parmesan, egg, almond flour, garlic powder, onion powder, salt, black pepper, and paprika. Mix well until all ingredients are fully incorporated.

        Shape the Tots: Preheat your oven to 400°F (200°C). Using your hands, form the mixture into small tot shapes (approximately 1-inch by 2-inches). Place them on a parchment-lined baking sheet, making sure they are spaced out.

          Bake the Tots: Lightly spray the tops of the tots with cooking spray or drizzle a little olive oil over them. Bake in the preheated oven for 25-30 minutes, or until they are golden brown and crispy on the outside.
