4 medium zucchini

1 cup marinara sauce (no sugar added)

1 cup shredded mozzarella cheese

1/2 cup sliced pepperoni (or any preferred toppings: mushrooms, bell peppers, olives)

1/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

    Prepare the Zucchini: Wash the zucchini and slice them in half lengthwise. Using a spoon, scoop out the center of each half to create a boat shape, leaving about 1/4 inch of zucchini around the edges. This will hold the toppings.
