Ingredients

1 lb Brussels sprouts, trimmed and halved

6 slices of thick-cut bacon, chopped

1/4 cup maple syrup

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup grated Parmesan cheese

1/4 cup chopped pecans (optional)

Fresh parsley, for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and place it on a paper towel-lined plate to drain excess grease. Reserve about 1 tablespoon of bacon grease in the skillet.

Prepare the Brussels Sprouts: In the same skillet with the reserved bacon grease, add the trimmed and halved Brussels sprouts. Toss them to coat in the grease, then add the olive oil, garlic powder, smoked paprika, salt, and black pepper. Mix until the Brussels sprouts are evenly coated.

Bake the Mixture: Spread the Brussels sprouts in an even layer on a large baking sheet or in a casserole dish. Sprinkle the cooked bacon over the top. Drizzle the maple syrup evenly over everything.

Add the Cheese: Sprinkle the grated Parmesan cheese over the Brussels sprouts and bacon.

Bake: Place in the preheated oven and bake for 25-30 minutes, stirring halfway through, until the Brussels sprouts are tender and caramelized, and the cheese is bubbly and golden.

Add Pecans: If using, sprinkle the chopped pecans on top and bake for an additional 5 minutes for a nice crunch.

Garnish and Serve: Remove from the oven and let cool slightly before garnishing with fresh parsley. Serve warm as a delightful side dish!
