Ingredients

3 cups rolled oats

1 cup nuts (walnuts, pecans, or almonds), roughly chopped

1/2 cup seeds (pumpkin or sunflower seeds)

1/2 cup shredded coconut (unsweetened)

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup maple syrup

1/4 cup coconut oil (melted)

1 teaspoon vanilla extract

1/2 cup dried fruit (such as cranberries or raisins), optional

Instructions

Preheat the Oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, shredded coconut, salt, and ground cinnamon. Stir well to blend the dry ingredients entirely.

Combine Wet Ingredients: In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until well combined.

Combine Mixtures: Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.

Form Clusters: Transfer the mixture onto the prepared baking sheet, spreading it out evenly. Press down firmly with a spatula to form large clusters. This step is crucial as it helps the granola stick together during baking.

Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, stirring halfway through. Keep an eye on the granola to prevent burning; remove it when it is golden brown.

Cool and Add Dried Fruit: Once baked, remove the granola from the oven and allow it to cool completely on the baking sheet. This cooling period will help the clusters firm up. If using dried fruit, mix it in once the granola has cooled.

Store: Once cooled, break the granola into clusters and store in an airtight container at room temperature for up to two weeks.
