Maple Roasted Vegetable Frittata

6 large eggs

1 cup chopped kale

1 cup diced sweet potatoes

1 cup diced bell peppers (any color)

1 small red onion, diced

1/4 cup maple syrup

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1/2 teaspoon paprika

1/4 cup crumbled feta cheese (optional)

Fresh thyme leaves for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Vegetables: In a large bowl, toss the sweet potatoes, bell peppers, red onion, olive oil, salt, pepper, garlic powder, paprika, and maple syrup until the vegetables are well coated.

      Roast Vegetables: Spread the vegetable mixture evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes or until the vegetables are tender and slightly caramelized. Make sure to stir halfway through for even roasting.

        Prepare Egg Mixture: In a separate mixing bowl, whisk together the eggs until smooth. Stir in the chopped kale and half of the feta cheese if using.

          Combine & Bake: Once the vegetables are done roasting, remove them from the oven and let them cool slightly. Lower the oven temperature to 350°F (175°C). In a greased 9-inch oven-safe skillet or baking dish, layer the roasted vegetables and pour the egg mixture over the top. Sprinkle the remaining feta cheese on top.

            Bake the Frittata: Bake the frittata in the oven for 25-30 minutes or until the eggs are set and the top is lightly golden. You can check for doneness by inserting a knife in the center; it should come out clean.

              Serve: Remove the frittata from the oven and let it cool for a few minutes. Garnish with fresh thyme leaves if desired before slicing. Serve warm or at room temperature.
