Ingredients

1 cup elbow macaroni

2 cups sharp cheddar cheese, shredded

1/2 cup mozzarella cheese, shredded

1/4 cup cream cheese, softened

1/4 cup milk

1 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

1 cup breadcrumbs (panko preferred for extra crunch)

1/2 cup all-purpose flour

2 large eggs

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook until al dente, about 8 minutes. Drain and set aside.

Make the Cheese Sauce: In a saucepan over medium heat, combine the cream cheese, milk, and half of the sharp cheddar. Stir until melted and smooth. Add garlic powder, onion powder, salt, and pepper. Mix in the cooked macaroni until well coated.

Cool the Mixture: Spread the mac and cheese mixture onto a parchment-lined baking tray. Allow it to cool in the fridge for about 30 minutes, or until firm.

Form the Poppers: Once cooled, scoop out small portions of the mac and cheese mixture and roll them into balls, approximately 1 inch in diameter.

Prepare the Breading Station: Set up three bowls – one with flour, another with beaten eggs, and the third with panko breadcrumbs.

Bread the Poppers: Roll each mac and cheese ball in flour, shaking off excess. Dip into the egg, and then roll in the breadcrumbs until fully coated.

Air Fry the Poppers: Preheat your air fryer to 375°F (190°C). Place the breaded mac and cheese poppers in a single layer in the air fryer basket. Lightly spray them with cooking spray for extra crispiness. Air fry for 8-10 minutes, or until golden and crispy.

Serve: Let the poppers cool for a few minutes before serving. They pair perfectly with marinara sauce or your favorite dipping sauce!
