Mini Bacon and Egg Tacos

Ingredients
  

6 small corn tortillas

4 large eggs

6 strips of bacon, chopped

1/2 cup shredded cheddar cheese

1/4 cup diced green onions

1/4 cup fresh cilantro, chopped

1 avocado, sliced

1/2 teaspoon smoked paprika

Salt and pepper to taste

Hot sauce (optional)

Instructions
 

Cook the Bacon: In a skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove bacon with a slotted spoon and drain on paper towels. Leave about 1 tablespoon of bacon grease in the skillet for the eggs.

    Scramble the Eggs: Whisk the eggs in a bowl and season with smoked paprika, salt, and pepper. Still using the skillet with the leftover bacon grease, pour in the beaten eggs and scramble for about 3-4 minutes until fully cooked. Remove from heat and stir in half of the cooked bacon and half of the chopped green onions.

      Warm the Tortillas: In a separate pan, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable. Keep them warm by wrapping in a clean kitchen towel.

        Assemble the Tacos: On each tortilla, place a spoonful of the scrambled eggs and bacon mixture. Top with shredded cheddar cheese, avocado slices, the remaining bacon, green onions, and chopped cilantro.

          Serve: Serve warm with hot sauce if desired, and enjoy your mini tacos!
