2 cans young green jackfruit in brine or water, drained and rinsed

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon ground cumin

½ teaspoon chili powder

1 cup BBQ sauce (store-bought or homemade)

Salt and pepper to taste

12 slider buns (mini burger buns)

Optional toppings: sliced pickles, coleslaw, or sliced jalapeños

Instructions
 

Prepare the Jackfruit: Shred the jackfruit pieces using your hands or a fork to create a pulled texture. Set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until translucent. Stir in the minced garlic, smoked paprika, cumin, and chili powder, and cook for an additional 1-2 minutes until fragrant.

      Cook the Jackfruit: Add the shredded jackfruit to the skillet. Stir well to combine with the spices and onions. Cook for 3-4 minutes, allowing the jackfruit to absorb the flavors.

        Add BBQ Sauce: Pour in the BBQ sauce, mixing everything together until the jackfruit is evenly coated. Reduce the heat to low and let it simmer for about 10 minutes, stirring occasionally. Season with salt and pepper to taste.

          Prepare the Sliders: While the jackfruit is simmering, lightly toast the slider buns in a toaster or on a skillet until golden brown.

            Assemble the Sliders: Take the bottom half of each slider bun and spoon a generous amount of the BBQ jackfruit mixture onto it. Add any optional toppings like pickles, coleslaw, or sliced jalapeños, then place the top bun over the filling.

              Serve: Serve the mini sliders warm, accompanied by extra BBQ sauce on the side for dipping.
