1 large eggplant

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini)

1/4 cup fresh basil leaves, chopped

2 tablespoons balsamic glaze

1 teaspoon olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon Italian seasoning

8 small slider buns or mini pita pockets

Prepare the Eggplant: Slice the eggplant into 1-inch thick rounds. Sprinkle both sides with salt and let sit for 20 minutes to draw out moisture. Rinse and pat dry.

    Season the Eggplant: Preheat your grill or grill pan over medium-high heat. Brush the eggplant slices lightly with olive oil and season with garlic powder, Italian seasoning, salt, and pepper.

      Grill the Eggplant: Place the eggplant slices on the grill and cook for about 4-5 minutes on each side, or until they have nice grill marks and are tender. Remove from the grill and let them cool slightly.

        Assemble the Sliders: Take one grilled eggplant slice and place it on the bottom half of a slider bun. Layer with a few halved cherry tomatoes, a mozzarella ball, and a sprinkle of fresh basil. Drizzle with balsamic glaze.
