For the Brownie Base:

1/2 cup (1 stick) unsalted butter, melted

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

For the Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 tablespoons sour cream (optional for added creaminess)

For Topping (optional):

Fresh berries (strawberries, blueberries, or raspberries)

Whipped cream

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it well.

    Make the Brownie Base:

      - In a mixing bowl, combine melted butter and sugar, and whisk until smooth.

        - Add in the eggs and vanilla extract, and mix well.

          - Sift in the cocoa powder, flour, salt, and baking powder. Stir until just combined; do not overmix.

            Prepare the Cheesecake Filling:

              - In another bowl, beat the softened cream cheese until creamy.

                - Add the sugar, egg, vanilla extract, and sour cream (if using). Mix until the cheesecake mixture is smooth and well combined.

                  Assemble the Cups:

                    - Spoon about 1 tablespoon of brownie batter into each mini muffin cup, filling about halfway.

                      - Carefully add about 1 tablespoon of the cheesecake filling on top of the brownie batter.

                        - For a swirled effect, gently use a toothpick to swirl the brownie and cheesecake mixtures together.

                          Bake:

                            - Bake in the preheated oven for about 18-20 minutes, or until the edges are set but the center is still slightly jiggly (they will firm up as they cool).

                              - Remove from the oven and allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
