For the Cheesecake Filling:

8 oz (225 g) cream cheese, softened

1/2 cup (100 g) granulated sugar

1/2 cup (120 ml) sour cream

1 tsp vanilla extract

1/4 cup (60 ml) heavy cream

For the Crust:

1 cup (100 g) graham cracker crumbs

1/4 cup (50 g) granulated sugar

1/2 cup (115 g) unsalted butter, melted

For the Toppings:

1 cup (150 g) mixed fresh fruits (strawberries, blueberries, raspberries, kiwi)

Mint leaves for garnish (optional)

Honey or maple syrup for drizzling (optional)

Instructions
 

Prepare the Crust:

    - In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

      - Using a muffin tin or silicone cupcake molds, press about 1 tablespoon of the crumb mixture into the bottom of each cup to form a crust. Use your fingers or the back of a spoon to ensure it's compact.

        Bake the Crust:

          - Preheat your oven to 350°F (175°C). Bake the crusts for 5-7 minutes until lightly golden. Remove from the oven and let them cool completely.

            Make the Cheesecake Filling:

              - In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.

                - Gradually add the sugar, mixing well until fully incorporated.

                  - Add the sour cream and vanilla extract, mixing until smooth.

                    - In a separate bowl, whip the heavy cream until soft peaks form, then gently fold it into the cream cheese mixture until fully combined.

                      Assemble the Cups:

                        - Spoon or pipe the cheesecake filling into each cooled crust, filling them almost to the top.

                          - Refrigerate for at least 2 hours to allow the filling to set.

                            Prepare the Fruits:

                              - While the cheesecakes are setting, wash and chop the mixed fruits, preparing them according to your preferences (slicing strawberries, etc.).

                                Top the Cheesecakes:

                                  - Once the cheesecakes are set, carefully top each cup with an assortment of fresh fruits. If desired, drizzle with honey or maple syrup for added sweetness.

                                    Garnish and Serve:

                                      - Optionally, add a mint leaf on top of each cup for a fresh touch. Serve immediately or keep refrigerated until ready to serve.
