1 cup cooked, shredded chicken

1 cup bell peppers (assorted colors), thinly sliced

1/2 cup onion, thinly sliced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper, to taste

1 package (8 ounces) refrigerated pizza dough

1 cup shredded mozzarella cheese

1/4 cup salsa

Fresh cilantro, for garnish

Sour cream, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Cook the Vegetables: In a skillet, heat olive oil over medium heat. Add the sliced bell peppers and onions, cooking until they begin to soften, about 5 minutes. Stir in the shredded chicken, chili powder, cumin, garlic powder, salt, and pepper. Cook for an additional 3-4 minutes until everything is heated through. Remove from heat and set aside.

      Prepare the Pizza Dough: Roll out the refrigerated pizza dough on a floured surface to about 1/4 inch thickness. Use a round cutter or a glass to cut out small circles (about 3 inches in diameter) from the dough.

        Assemble the Bites: On half of the dough circles, spoon a small amount of the chicken and veggie mixture, then top with a sprinkle of mozzarella cheese and a dollop of salsa. Use the remaining dough circles to cover the filled ones, pressing the edges to seal. Optionally, you can crimp the edges with a fork for a decorative touch.

          Bake: Place the assembled pizza bites on the prepared baking sheet and brush the tops with a little olive oil. Bake in the preheated oven for 12-15 minutes or until golden brown and the cheese is melted.

            Garnish and Serve: Remove from the oven, let cool for a few minutes, then sprinkle with chopped fresh cilantro. Serve warm with additional salsa and sour cream on the side.
