For the Chicken Fajita Filling:

1 lb boneless, skinless chicken breasts, sliced thin

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small red onion, sliced

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

Juice of 1 lime

For the Waffles:

1 cup all-purpose flour

1 tablespoon baking powder

1 tablespoon sugar

1/2 teaspoon salt

1 cup buttermilk

1 large egg

1/4 cup melted butter

1/2 cup shredded cheddar cheese (optional)

For Assembly:

Sour cream or Greek yogurt

Fresh cilantro, chopped

Avocado slices

Salsa or pico de gallo

Instructions
 

Prepare the Chicken Fajita Filling:

    - In a large bowl, combine the sliced chicken, bell peppers, onion, olive oil, chili powder, cumin, paprika, salt, pepper, and lime juice. Toss everything together until the chicken and vegetables are well coated.

      - Heat a skillet over medium-high heat. Add the chicken and vegetable mixture and cook for about 8-10 minutes, stirring occasionally, until the chicken is cooked through and the vegetables are tender. Remove from heat and set aside.

        Make the Waffles:

          - Preheat your waffle maker according to the manufacturer's instructions.

            - In a mixing bowl, combine the flour, baking powder, sugar, and salt. In another bowl, whisk together the buttermilk, egg, and melted butter.

              - Pour the wet ingredients into the dry ingredients and stir until just combined. If desired, fold in the shredded cheddar cheese.

                - Spray the waffle maker with cooking spray and pour an appropriate amount of batter into the preheated waffle maker (approximately 1/2 to 3/4 cup depending on your waffle maker size). Cook until the waffles are golden brown and cooked through. Repeat with the remaining batter.

                  Assemble the Wraps:

                    - Once the waffles are cooked, place a generous scoop of the chicken fajita filling on one half of each waffle. Top with sour cream, chopped cilantro, avocado slices, and salsa.

                      - Fold the waffle over to create a wrap. Optionally, you can place the wraps back in the waffle maker to crisp up the exterior for a minute.

                        Serve:

                          - Serve the mini chicken fajita waffle wraps warm with extra sour cream and salsa on the side for dipping.
