2 large whole wheat pita breads

1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

1 tablespoon ground cumin

1 tablespoon ground coriander

1 teaspoon paprika

1 teaspoon turmeric

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup shredded mozzarella cheese

½ cup plain Greek yogurt

2 tablespoons tahini sauce

1 small cucumber, diced

1 medium tomato, diced

¼ red onion, finely chopped

Fresh parsley, chopped for garnish

Lemon wedges, for serving

Marinate the Chicken: In a bowl, combine olive oil, cumin, coriander, paprika, turmeric, garlic powder, onion powder, salt, and pepper. Add the chicken thighs, making sure they are evenly coated. Cover and marinate for at least 30 minutes or overnight in the refrigerator for more flavor.

    Cook the Chicken: Preheat your grill or stovetop skillet over medium-high heat. Cook the marinated chicken for about 6-8 minutes on each side until cooked through and nicely charred. Remove from heat and let it rest for a few minutes before slicing into thin strips.

      Prepare the Pita Bases: While the chicken is cooking, preheat your oven to 425°F (220°C). Place the whole wheat pita breads on a baking sheet.

        Assemble the Pizzas: Spread a layer of shredded mozzarella cheese evenly over each pita bread. Top with the sliced chicken shawarma, ensuring each pita is well-covered.
