When preparing the crispy chicken for your sliders, the use of parchment paper and olive oil spray is crucial for achieving the perfect texture. Parchment paper serves multiple purposes: it prevents the chicken from sticking to the baking sheet, allows for even cooking, and makes cleanup a breeze. By using parchment paper, you can ensure that your chicken pieces develop a delightful golden-brown exterior without any risk of tearing or sticking.

Ingredients

1 pound boneless, skinless chicken thighs

1 cup buttermilk

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

12 mini slider buns

1 cup romaine lettuce, chopped

½ cup Caesar dressing

Additional grated Parmesan for garnish

Olive oil spray

Instructions

Prepare the Chicken: Place the chicken thighs in a bowl, and pour the buttermilk over them. Ensure they are fully submerged, cover, and refrigerate for at least 1 hour (or overnight for best results).

Make the Breading Mixture: In a shallow dish, combine panko breadcrumbs, grated Parmesan cheese, garlic powder, paprika, salt, and pepper. Mix well.

Coat the Chicken: Preheat your oven to 400°F (200°C). Remove the chicken from the buttermilk, letting excess liquid drip off. Dredge each piece in the breadcrumb mixture, pressing firmly to coat.

Bake the Chicken: Arrange the breaded chicken on a baking sheet lined with parchment paper. Spray lightly with olive oil spray for extra crispiness. Bake for 20-25 minutes, until golden brown and cooked through (internal temperature should be 165°F).

Prepare the Sliders: While the chicken is baking, mix the chopped romaine lettuce with the Caesar dressing in a bowl.

Assemble the Sliders: Once the chicken is done, slice each chicken thigh into smaller pieces that fit the slider buns. Place a piece of crispy chicken on the bottom half of each slider bun. Top with a generous spoonful of the dressed romaine and sprinkle additional grated Parmesan over the top. Cap each slider with the bun top.

Serve: Arrange the sliders on a platter and serve immediately. Optional: Serve with extra Caesar dressing on the side for dipping.
