Mini Egg & Cheese Bagel Pizzas

4 mini bagels (plain or everything-flavored)

4 large eggs

1 cup shredded cheddar cheese (or your preferred cheese)

½ cup cherry tomatoes, halved

¼ cup sliced green onions

1 tablespoon olive oil

Salt and pepper, to taste

½ teaspoon garlic powder (optional)

Fresh parsley or basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bagel Bases: Slice the mini bagels in half and place them cut-side up on a baking sheet lined with parchment paper.

      Cook the Eggs: In a skillet, heat olive oil over medium heat. Crack the eggs into a bowl and whisk them lightly with a pinch of salt, pepper, and garlic powder if using. Pour the eggs into the skillet and scramble them until just cooked through but still soft and slightly runny (about 2-3 minutes). Remove from heat.

        Assemble the Pizzas: On each bagel half, spoon a generous amount of scrambled eggs. Top with shredded cheddar cheese, halved cherry tomatoes, and green onions.

          Bake: Place the assembled bagel pizzas in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly, and the bagels are slightly toasted.
