4 slices of crusty bread (like sourdough or ciabatta)

4 large eggs

1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)

1/4 cup milk

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

Fresh herbs (such as chives, parsley, or thyme) for garnish

Cooking spray or butter for greasing the muffin tin

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Muffin Tin: Grease a standard muffin tin with cooking spray or a little melted butter to prevent sticking.

      Make the Bread Cups: Using a rolling pin or your hands, flatten each slice of bread slightly. Carefully press each slice into a muffin tin cavity to form a cup shape. Ensure the edges are high enough to hold the filling.

        Whisk the Egg Mixture: In a mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

          Assemble the Cups: Sprinkle a tablespoon of shredded cheese at the bottom of each bread cup. Carefully pour the egg mixture over the cheese until it’s almost full (leave a little space as it will expand while baking). Top with the remaining cheese.

            Bake the Cups: Place the muffin tin in the preheated oven and bake for 15–20 minutes, or until the eggs are set and the tops are golden brown.

              Cool and Serve: Once baked, remove the mini egg toast cups from the oven and allow them to cool for a few minutes. Gently run a knife around the edges to help release them from the tin.

                Garnish and Enjoy: Sprinkle freshly chopped herbs on top before serving for a burst of freshness. Enjoy hot or at room temperature.
