Ingredients

1 cup pumpkin puree (canned or fresh)

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/4 cup vegetable oil

1 large egg

1 tsp vanilla extract

1 1/2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tbsp pumpkin spice mix (or a mix of cinnamon, nutmeg, and ginger)

1/2 cup powdered sugar (for glazing)

1-2 tbsp milk (for glazing)

Instructions

Preheat the oven: Preheat your oven to 350°F (175°C) and lightly grease a mini donut pan with cooking spray or oil.

Mix wet ingredients: In a large mixing bowl, combine pumpkin puree, granulated sugar, brown sugar, vegetable oil, egg, and vanilla extract. Whisk until the mixture is smooth and combined.

Combine dry ingredients: In another bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and pumpkin spice mix. Make sure there are no lumps in the flour mixture.

Combine mixtures: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix; a few lumps are okay.

Fill the pan: Spoon the batter into the prepared mini donut pan, filling each cavity about 2/3 full. You can use a piping bag or a ziploc bag with the corner snipped off for easy filling.

Bake: Bake in the preheated oven for 10-12 minutes, or until the donuts spring back when touched and a toothpick inserted comes out clean.

Cool: Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Prepare glaze: In a small bowl, whisk together the powdered sugar and 1-2 tablespoons of milk until smooth and creamy. Adjust the milk as needed for your desired glaze consistency.

Glaze the donuts: Once the donuts are completely cooled, dip the tops in the glaze or drizzle it over the donuts using a spoon.

Serve & Enjoy: Arrange your mini donuts on a platter, and enjoy them warm or at room temperature!
