Mini Sausage and Egg Waffle Tacos

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp salt

1/2 tsp black pepper

1 cup buttermilk

1 large egg

1/4 cup melted butter

1 cup breakfast sausage (cooked and crumbled)

4 large eggs (for filling)

1/4 cup shredded cheddar cheese

1/4 cup chopped green onions

Salsa or hot sauce (for serving)

Fresh cilantro leaves (optional, for garnish)

Instructions
 

Make the Waffle Batter: In a mixing bowl, whisk together the flour, baking powder, salt, and black pepper. In a separate bowl, combine the buttermilk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined. Avoid overmixing.

    Preheat the Waffle Iron: Preheat your waffle iron according to the manufacturer's instructions. Lightly grease it with cooking spray or melted butter.
