2 medium sweet potatoes

4 large eggs

1/2 cup shredded sharp cheddar cheese

1/4 cup diced bell pepper (red, yellow, or green)

1/4 cup finely chopped green onions

1/2 tsp garlic powder

1/2 tsp paprika

Salt and pepper, to taste

Olive oil, for brushing

Fresh parsley, for garnish (optional)

Instructions
 

Prepare Sweet Potatoes: Preheat your oven to 400°F (200°C). Pierce each sweet potato with a fork several times, then wrap them in foil and bake for about 45-60 minutes, or until tender. Let them cool slightly.

    Make Sweet Potato Nests: Once cool enough to handle, cut each sweet potato in half lengthwise. Scoop out a small portion of the flesh in the center to create a nest, leaving some flesh along the edges for stability. (Save the scooped-out flesh for another use, such as smoothies or mashed sweet potatoes.)

      Season and Fill: In a bowl, combine the shredded cheddar cheese, diced bell pepper, green onions, garlic powder, paprika, and a pinch of salt and pepper. Mix well. Spoon this mixture into each sweet potato half, filling it generously.

        Add Eggs: Carefully crack an egg into each sweet potato nest, letting it settle on top of the cheese and veggie mixture. If necessary, you can beat the eggs lightly and pour them in if you prefer a scrambled texture.

          Bake Again: Place the filled sweet potato nests on a baking sheet. Brush the tops lightly with olive oil to help the eggs cook to a golden hue. Bake in the preheated oven for about 20-25 minutes, or until the eggs are set to your desired doneness.

            Garnish and Serve: Remove the nests from the oven and let them cool slightly. Garnish with fresh parsley if desired and serve warm.
