Ingredients

2 medium zucchinis, finely grated

1 cup breadcrumbs (preferably whole wheat or panko)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 large egg

2 tablespoons fresh parsley, chopped

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

12 small rounds of baguette or mini toast slices

Olive oil for brushing

Optional: Red pepper flakes for a hint of spice

Instructions

Prepare the Zucchini: Place the grated zucchini in a clean kitchen towel or cheesecloth, twist, and squeeze out excess moisture. This step is crucial to prevent sogginess.

Mix the Ingredients: In a mixing bowl, combine the drained zucchini, breadcrumbs, mozzarella cheese, Parmesan cheese, minced garlic, egg, parsley, oregano, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Toast Bases: Arrange the baguette rounds or mini toasts on a baking sheet lined with parchment paper. Lightly brush the tops with olive oil for added flavor and crispness.

Assemble the Cups: Using a tablespoon or a small cookie scoop, generously pile the zucchini mixture onto each round, pressing down slightly to make sure they shape well.

Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and the cheese is bubbly.

Finishing Touches: Once out of the oven, you can sprinkle a few red pepper flakes on top for a touch of heat, if desired. Allow to cool for a couple of minutes before serving.

Serve and Enjoy: Transfer the Mini Zucchini Garlic Toast Cups to a platter and serve warm as a delightful appetizer or snack!
