2 medium zucchinis, grated

1 teaspoon salt

1 cup all-purpose flour

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

2 large eggs

1/4 cup fresh basil, finely chopped

1 teaspoon garlic powder

1/2 teaspoon black pepper

Olive oil (for greasing the waffle iron)

Marinara sauce (for serving)

Extra basil leaves (for garnish)

Prepare the Zucchini: In a large mixing bowl, combine the grated zucchinis with salt. Let them sit for about 10-15 minutes to draw out excess moisture. Afterward, use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible.

    Make the Batter: In the same bowl, add flour, Parmesan cheese, mozzarella cheese, eggs, chopped basil, garlic powder, and black pepper. Mix until thoroughly combined. The mixture should be slightly thick but pourable.

      Preheat the Waffle Iron: Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease it with olive oil to prevent sticking.

        Cook the Waffles: Pour about 1/4 cup of the zucchini batter onto the waffle iron and spread it slightly. Close the lid and cook for 3-5 minutes, or until the waffles are golden brown and crispy. Remove and repeat with the remaining batter until you have about 8 mini waffles.

          Assemble the Sliders: Once the waffles are cool enough to handle, take two waffles and stack them with a generous spoonful of marinara sauce in between, forming a slider. Optionally, top with extra melted mozzarella and a sprinkle of basil.
