2 medium zucchinis, grated

1 teaspoon salt

1/2 cup all-purpose flour

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

2 large eggs, beaten

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1/4 cup marinara sauce (plus extra for serving)

Olive oil, for frying

Fresh basil leaves, for garnish

Instructions
 

Prepare the Zucchini:

    In a colander, combine grated zucchini and salt. Let it sit for about 10-15 minutes to draw out excess moisture. After resting, use a clean kitchen towel to squeeze out any additional liquid.

      Mix the Batter:

        In a large mixing bowl, combine the drained zucchini, flour, Parmesan cheese, mozzarella cheese, beaten eggs, Italian seasoning, garlic powder, and black pepper. Mix until well combined.

          Form the Fritters:

            Heat a generous amount of olive oil in a non-stick skillet over medium heat. Once hot, scoop about 2 tablespoons of the zucchini mixture and flatten it slightly to form a fritter. Repeat with the remaining mixture, frying in batches.

              Fry the Fritters:

                Cook each fritter for about 3-4 minutes on each side, or until golden brown and crispy. Remove them from the skillet and place on paper towels to remove any excess oil.

                  Assemble the Stacks:

                    Take one fritter and spread a teaspoon of marinara sauce on top, add a sprinkle of mozzarella cheese, and then top with another fritter. Repeat the layering process until you have a stack (2-3 fritters high, depending on preference).

                      Final Touch:

                        Place the assembled stacks back in the skillet for about 1-2 minutes just to warm them through and melt the cheese slightly.
