2 medium zucchinis

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup marinara sauce (plus more for dipping)

1 tablespoon Italian seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 package of pre-made pizza dough (store-bought or homemade)

Olive oil for brushing

Fresh basil leaves for garnishing (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: Wash and slice the zucchinis lengthwise into thin strips (about 1/4 inch thick). Lay the zucchini slices on a clean kitchen towel, sprinkle with a little salt, and let them sit for 10-15 minutes to draw out excess moisture. Pat them dry with another towel.

      Make Ricotta Filling: In a mixing bowl, combine the ricotta cheese, shredded mozzarella, grated Parmesan, Italian seasoning, garlic powder, onion powder, salt, and pepper. Mix thoroughly until well combined.

        Roll the Pizza Dough: On a lightly floured surface, roll out the pizza dough into a rectangle, about 1/4 inch thick. Cut the dough into strips, approximately 2-3 inches wide.

          Assemble the Rolls: Take a strip of pizza dough and spread a thin layer of marinara sauce over it. Place a few zucchini strips horizontally across the dough, and add a generous dollop of the ricotta mixture on top of the zucchini. Roll the dough over to form a tight roll. Place seam side down on the prepared baking sheet.

            Brush with Olive Oil: Once all mini rolls are assembled, brush the tops of each roll with olive oil for a golden finish.

              Bake: Place the rolls in the preheated oven and bake for 15-20 minutes, or until the dough is golden brown and cooked through.

                Serve: Allow the rolls to cool slightly before serving. Garnish with fresh basil if desired, and serve with extra marinara sauce for dipping.
