Ingredients

1 lb ground beef

8 oz mushrooms, sliced

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon Worcestershire sauce

1 teaspoon Dijon mustard

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup Swiss cheese, shredded (reserve some for topping)

1 cup beef broth

1 tablespoon olive oil

1 tsp dried thyme

1 cup cooked egg noodles (or pasta of your choice)

2 tbsp fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Meat: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent (about 3-4 minutes). Add in the minced garlic and cook for another 30 seconds until fragrant.

Brown the Beef: Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, then drain any excess fat.

Sauté the Mushrooms: Stir in the sliced mushrooms, Worcestershire sauce, Dijon mustard, salt, pepper, and thyme. Cook, stirring occasionally, for about 5-7 minutes until the mushrooms are tender.

Combine Ingredients: In a large mixing bowl, combine the cooked egg noodles, beef mixture, beef broth, and half of the Swiss cheese. Mix well to ensure the noodles are evenly coated.

Assemble the Casserole: Pour the mixture into a greased 9x13-inch baking dish, spreading it out evenly. Top with the remaining Swiss cheese.

Bake: Place in the preheated oven and bake for 25-30 minutes or until the cheese is bubbling and golden brown.

Garnish and Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
