2 cups puffed rice cereal

1 cup almond butter

½ cup honey or maple syrup

½ teaspoon vanilla extract

¼ teaspoon salt

½ cup chopped almonds (optional)

¼ cup mini chocolate chips (optional)

Instructions
 

Prepare the pan: Line an 8x8 inch square baking dish with parchment paper, leaving some overhang for easy removal later.

    Mix wet ingredients: In a medium saucepan over low heat, combine the almond butter, honey (or maple syrup), vanilla extract, and salt. Stir continuously until the mixture is warm and smooth, about 3-4 minutes. Avoid boiling.

      Combine dry ingredients: In a large mixing bowl, add the puffed rice cereal and chopped almonds (if using). Mix well to ensure an even distribution.

        Combine wet and dry: Pour the warm almond butter mixture over the puffed rice cereal. Using a rubber spatula, gently fold everything together until the cereal is well-coated. If desired, fold in mini chocolate chips at this stage.

          Press mixture into pan: Transfer the mixture to the prepared baking dish. Using the back of the spatula or your hands (dampened slightly to prevent sticking), firmly press the mixture into an even layer.
