No-Bake Berry Cheesecake Bars

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

16 oz (450g) cream cheese, softened

¾ cup powdered sugar

1 tsp vanilla extract

2 cups heavy whipping cream

1 cup mixed berries (strawberries, blueberries, raspberries)

For the berry topping:

1 cup mixed fresh berries (as above)

2 tbsp granulated sugar

1 tbsp lemon juice

Instructions
 

Prepare the Crust:

    In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until all crumbs are evenly coated. Press the mixture evenly into the bottom of a lined 9x9-inch (or similar-sized) baking pan. Use the back of a measuring cup to ensure it’s tightly packed. Place in the refrigerator to set while you prepare the filling.

      Make the Cheesecake Filling:

        In a large mixing bowl, beat the softened cream cheese and powdered sugar together with an electric mixer until smooth and creamy. Add in the vanilla extract and mix well.

          Whip the Cream:

            In a separate bowl, whip the heavy cream until stiff peaks form, approximately 3-5 minutes. Carefully fold the whipped cream into the cream cheese mixture a little bit at a time, being gentle to maintain the light and airy texture.

              Combine with Berries:

                Lightly fold in the mixed berries into the cheesecake filling, reserving some for the topping later. Pour the filling over the prepared crust in the baking pan, spreading it evenly with a spatula.

                  Chill:

                    Cover the pan with plastic wrap or foil and refrigerate for at least 4 hours, or until fully set (overnight is best).

                      Prepare the Berry Topping:

                        In a small bowl, toss the fresh berries with granulated sugar and lemon juice. Allow them to sit for about 10-15 minutes to macerate and release their juices.

                          Serve:

                            Once the cheesecake has set, remove it from the refrigerator and carefully lift it out of the pan using the parchment paper overhang. Cut into bars and top with the macerated berries before serving.
