1 cup unsweetened shredded coconut

½ cup melted coconut oil (or unsalted butter)

¼ cup honey or maple syrup

1/4 cup fresh lemon juice

Zest of 1 lemon

1 can (14 oz) sweetened condensed milk (dairy or coconut-based)

¼ teaspoon sea salt

Optional: Additional shredded coconut for topping

Prepare the Base: In a medium mixing bowl, combine the graham cracker crumbs, shredded coconut, melted coconut oil, honey (or maple syrup), and a pinch of sea salt. Mix until well combined and the crumbs hold together when pressed.

    Press Into Pan: Line an 8x8-inch square baking dish with parchment paper, leaving some overhang for easy removal later. Press the crumb mixture firmly and evenly into the bottom of the prepared dish. You can use a flat-bottomed glass or measuring cup to help compress it.
